Chef Keller had several opportunities to come to Las Vegas, but when Sheldon Adelson and Robert Goldstein presented the opportunity to open a restaurant at The Venetian in the new Venezia Tower, that piqued his interest.
The Venetian is a unique location for Bouchon Bistro. The LEED-certified, AAA Five Diamond luxury resort on the Las Vegas Strip embodies the spirit of Italy, complete with frescos, plenty of pasta, canals, gondolas and strolling performers. However, The Venezia Tower is detached from the casino and the rest of the property. The courtyard provided a tranquil outdoor component with ample room for private dining. Bouchon's location in The Venezia Tower transformed a restaurant space into an oasis in the desert.
Visitors to The Venetian can also find three locations of Bouchon Bakery throughout the resort and casino - in front of The Venetian Theater, next to the Sports Book in The Venetian Clock Tower, and on the 2nd Floor Bridge in The Venetian Clock Tower.
